Thanks to the Outside Dispatches Blog for a recent post featuring the GSI Outdoors Pinnacle Camper cooking system. Sounds like they had lots of fun cooking with “The Ultimate Backcountry Kitchen”. Our favorite quote… “It is shockingly compact but crammed with tons of useful stuff: two anodized aluminum pots (3 liter and 2 liter), a fry pan, two rubber lids, a pot gripper, four plates, four insulated mugs, four color-coded bowls, and a welded stuff sack that doubles as a wash basin (and, in a pinch, an Easter basket).” “Easter Baskets”… our advanced GSI product development team never considered that in the design!
Dutch Oven Carne Asada- an easy recipe yields flavorful campfire burritos!

GSI Outdoors Dutch Oven Carne Asada
Although Carne Asada is traditionally grilled, this easy recipe yields flavorful burritos enhanced by Dutch Oven Cooking over the campfire!
Ingredients-
2 lbs. Beef cut into 1/4” Strips
4 Tablespoons Olive Oil
1 Medium Onion sliced/chopped
2 Cloves Garlic
3 tablespoons Mexican Oregano
1 Cup fresh Cilantro chopped
1 or 2 Jalapeño Chilies
1 Tablespoon Cayenne Pepper (optional)
Tortillas
Lime Wedges
Salsa
1. Sauté in the open Dutch Oven until brown-
Olive Oil, Onion, Garlic, Mexican Oregano, Chilies & Cayenne Pepper
2. Stir in Beef cut into 1/4” Strips
3. Cover and Bake in Dutch Oven for 4 minutes at 350° F.
4. Flip the lid off and turn it upside on a wire rack to heat Tortillas.
5. Add a squeeze of lime, cilantro & your favorite salsa and enjoy!

“When GSI starts addressing their company history with Canadian trappers, large volumes of alcohol and coffee necessities post debauchery morning in the cold mountains, I was intrigued to read more. The company began its impressive outdoor products in 1985 and have advanced to help the backcountry enthusiast to the family car campers. For this particular product, I tested out the GSI Pinnacle Camper cook set for the rare occasions I go out with a larger group and would need car camping products. As a veteran of go light and go fast backpacking, I was excited to chill down a little and spend time cooking foods I would normally not bring along due to weight restrictions.
Appearance: For cooking in the backcountry or more appropriately the car campsite. Color-coded cups, lids, and plates make it easy for a family to figure who gets which plate. Little Johnny may prefer the blue one, but Suzy always wants the red one. The parents are ambivalent as they are just pleasured they are outside with their kids.
Function: It’s an entire cook system in a nifty stacking apparatus. From the fry pan on top, to the large pot at the bottom, everything is included. The GSI Pinnacle Camper is ideal for a family of 4 unless a party of two wants to be extra kind and share with your neighbors. Nothing is left behind from a cool strainer lid to four insulated cups. Even the carrying case can be doubled into a kitchen sink for the hard to scrub dishes after the meal. Since these are not made for the ultra light backpacker, it is recommended to utilize this cook set for the car camping option. As far as their function regarding cooking, I was quite pleased. Their Teflon coating was easy to clean up and didn’t leave the remnant flavors of Thai curry from the night before for breakfast the following morning. Heat appeared to be evenly spread throughout the entire base which can be a dilemma for those in the backcountry based on your heat source. The one downfall to this system is the gripper needed to pick up the pots/ fry pan. Although a very ingenious idea, practically when your food is on the fire and time is of the essence to slide it over or remove it, it was cumbersome and almost dangerous. This is not a tool that kids can learn to cook on a fire with.
Durability/Quality: The Teflon abrasion resistant coating will serve this cook set well for a number of car camping seasons. I don’t imagine the pots/fry pan will cause any unnecessary issues when you are enjoying your camping experience. The plates may need to be replaced every year as I would be concerned that the absorption of food may warrant a change.
Price: $129.95. It’s like building a bike from scratch or buying the bike pre-made. Purchasing individual pieces would add up, however the cost is ideal for the entire system.”

When it comes to eating in the back country, things need to stay simple. A bowl, a plate, a few condiments, a spork, and some chop sticks. That’s right, chop sticks! These ancient Asian eating utensils can be a fun addition to your pack, be a talking point around the fire, and help get noodles to your mouth. Ultralight aficionados may scoff at the idea of bringing this luxury in to the back country, but when they weigh less than a pencil, one has to wonder why the haters are hatin’.
Our friends at GSI Outdoors have combined the convenience of a titanium spork (which they call a “foon”) and mashed it up with the fun of chop sticks to create the Kung Foon. By sliding the sticks through the holes in the foon, an extended handle serving spoon is created for dishing out meals to a group or digging deep into those dehydrated pouches that tend to get your hand all gooey and gross.
The foon is a fabulous eating tool all by itself. Its deep bowl allows it to be used as a fully functional spoon for soups and mushy meals. Well all it came, it went, it was fun. I just returned from the BASS Federation Nation Western Divisional in Navajo, New Mexico. It was quite the adventure to say the least. after making two turn a rounds for forgotten items and a 19 hour non-stop road trip. my traveling companions and I were burnt out but that didn’t stop us from hitting the lake first thing. I was awake for something like 36 hours it was insane. I didn’t realize I had it in me still. The scenery was beautiful and the weather for the most part complied with our needs. I could have done without the wind though but I guess it blows every day down there and that’s just the way it goes. Well now I can say my GSI dukjug is a multi-state traveler. (I should start getting state stickers and slapping them on it like people used to do with luggage). It stood by me through he whole adventure and kept me well hydrated in the southwest sun. I just wish it had a sunblock dispenser. Ultimatley in the end I did ok you can follow the link below and see the breakdowns. Now it is off to the lake for a little camping, cooking and fishing in preparation for this years state team qualifiers.

Well blog-a-sphere fans. I bet you’ve been wondering “where has that Jeremy guy been” well in all honesty I have just been fishing, camping, and hunting.
they’re what I do best. Ok well maybe I fish best but I enjoy them all. As you can see from the associated image. I have been having a ball. That little keeper
qualified me for the Idaho Bass Federation Nation State team. Come May of next year it’s just me, my pinnacle backpacker, and a long drive to New Mexico to represent my stateand GSI Outdoors at the western divisional.
I know I know it’s all pretty exciting but lets stay focused on the season at hand and enjoy the holidays shall we. There is plenty of snowshoeing, snowboarding and of course ice fishing to be done up here in the north lands. Well off to do some more hand modeling. I won’t wait so long to return. Cheers.
Developing Delights

Spokane, WADesigning products with high tech fits and features is a great challenge. We’re working with advances in new materials and refocusing on recycling including introducing our first totally “repurposed material” product made from “evil” PC water bottles. We have enjoyed our relationship with Leave No Trace in developing the Cat Hole Trowel. This baby could cut down a small tree (not advised!). I heard of a fisherman in Idaho gutting big fish with one (haven’t seen it).
The Minimalist was a product conceived over 3 years ago. Now it’s totally dialed in and works great for demanding users. The lid is a high performance plastic alloy. The lid ring is silicone, also great for high temperature applications. Fits on the seals are snug for drinking and handling safety. This baby won’t blow off in the wind . The pot boils liquids in no time and uses residual heat from the pot to keep food warm after slipping it into its own pot cozy. The silicone “two finger” pot grabber easily snatches the pot off a hot stove and stows attached to the gas can with a magnet.
The cover/seal slips onto the pot best when wet (most cooking scenarios). I always season every pot I have with high grade olive oil. This gets the flavors started and seals the finish nicely. Also, I hand wash all my gear. Dishwashers can be very harsh.
We lost our designer this year to a gig in England. Teaching and leading others in the Bristol university. We already miss Kurt.
New stuff is in the pipe. Can’t talk about it yet. Just think Ironman…
Welcome to 2004

Spokane, WaLike most trends, blogging seems to have taken five or six years to reach our little corner of the Northwest. Admittedly, we’re skeptical of most trends. We’re not in preproduction on a new 3D feature about teen vampire wizards. We always thought that in the battle of fixie versus Ford F350, that brakes and decent handlebars were far more aesthetic than having “SUPER DUTY” permanently debossed in one’s forehead. And, with all of the natural beauty that the Northwest has to offer, we could never really force ourselves to interrupt our activities to seek out a Wi-Fi hotspot so that we could post our latest thoughts about Ashton Kutcher or Avatar.
But today, a strange shift is taking place. Perhaps our latest site redesign has us feeling reenergized, overflowing with the unbounded excitement for the potential of the amazing world of the interweb. Perhaps the rainy winter and low snowpack has left feeling anxious to get out into the world, even if it is on a purely-virtual level. Perhaps we’re feeling nostalgic for 2004. Or perhaps, we just weren’t properly immunized against blog fever. Either way, we’re eager to share with you a bit of what we’re seeing, thinking and inventing in our corporate headquarters as we watch our windows wistfully, one eye on the web and the other on the still wintry summit of Mt. Spokane.
For now though, we’re just excited to see what new ideas, new discoveries and new friends we may find on our first furtive foray into the world wide wilderness. From time to time you’ll hear from Mike our resident Marketing Mogul and Industry Insider, from Dave our devious Director of Product Development, from Jeremy our in-house hand model and angler extraordinaire, and from myself, fan of phrase, photograph and fantastic design. We’ll bring you most anything that piques our interest, so long as it meets our one and only rule- it must fit into a category which starts with the letter “I”.
From the start, we will have six categories: Inspiration, Ideas, Items, Incidents, Invites and Informal. “Inspiration” includes those things that we’ve seen from around the web or out in the world that we felt compelled to share. “Ideas” is the category where musings may meander freely, where one might expound upon the notion of car camping or instruct in the proper preparation of a pot of coffee. “Items” serves as our introduction to new GSI Outdoors products which are sure to revolutionize the world, or at least change the way you think about getting outdoors. “Incidents” records the unique happenings around the office; from product testing to prolonged NERF battle. “Invites” serve as an entreaty to join us, whether online or in-person at trade shows, seminars, industry events or any other function. Finally, “Informal” is for the random bits which seem to defy classification, but which the world still deserves to see.
We’re approaching our newborn baby blog as an opportunity to grow closer as a family as we nurture it through its first words, the inevitable sleepless nights and those countless accidents. We’ll be sharing it all, along with photos documenting every moment which we as proud parents so love to share. But mostly, we’ll just be sharing a bit of ourselves while we watch proudly as our little creation journeys out into that wide world beyond our polychromed walls. We hope that you’ll enjoy watching our little GSI Outdoors family grow and that you might stop in from time to time to look in on what we’ve been doing, to share your comments or just lurk. After all, it’s usually best not to disturb the wildlife.
